Foul Medammes
Serves 3
Ingredients
- 1 cup cooked fava beans or canned fava beans
- 1/2 cup lemon juice
- 3 cloves of garlic crushed with 1 teaspoon of salt
- 2 tablespoons of finely chopped fresh parsley
- 1/2 cup olive oil
Method
- Drain the warm fava beans.
- Put in a bowl.
- Mix garlic, lemon juice and 1/2 quantity of oil.
- Add to beans and mix well.
- Garnish with parsley and olive oil.
- Serve with spring onions and tomatoes.
